Strawberry Bark

A snack for the kids to enjoy without the guilt. Or enjoy it equally as a treat after lunch or supper. Get real crazy and even start the day with this sweet treat for breakfast. This bark hits the strawberry spot!

Makes approx. 20 pieces.

{INGREDIENTS}

1 cup plain greek yogurt – or whatever flavor you prefer

1 16 oz container of strawberries (diced small)

1 heaping cup of semi-sweet chocolate chips

1 tsp oil

{INSTRUCTIONS}

Dice up strawberries as small as you prefer. Gently mix greek yogurt with strawberries. Cover a baking sheet with plastic wrap or silicon mat. Scoop greek yogurt strawberry mixture onto covered pan, then spread into a square about a half inch thick. Place in freezer for at least an hour, or overnight. Pull out of fridge and break into multiple bite-size pieces. Place back in freezer.

Pour semisweet chocolate chips in a microwave-safe bowl. Heat for one to two minutes, stirring at thirty second intervals until fully melted and smooth. Add one tsp of oil to loosen chocolate and make coating smoother. Drop a piece of strawberry bark into the melted chocolate, then use a fork to fully coat it. Retrieve from chocolate and tap off any excess or dripping chocolate. Drop coated piece of bark back onto covered baking sheet to be put back in freezer. Repeat with each piece of bark until all are coated and back on pan.

Place pan back in freezer for up to an hour. Be sure pieces are fully frozen before gathering and placing in a freezer-safe bag or container. Store for multiple months… if they last that long!
