[Ingredients]
8 oz sourdough starter (1 1/4 cup)
2 oz water (1/4 cup)
4 oz brown sugar (1/2 cup – packed)
2 oz any type flour (1/3 cup)
11 oz oats (3 1/2 cups)
1 tsp salt
4-8 oz nuts/seeds of choice (1 cup nuts, 1/2 cup seeds)
3 oz coconut oil or melted butter (1/4 cup)
4 oz honey or maple syrup (1/4 cup)
2 tsp vanilla

Mix the first four ingredients in a medium bowl. Cover the bowl with a towel and let sit at room temperature to ferment for four hours. In a separate bowl, combine salt, rolled oats, and nuts/seeds. (If omitting seeds or nuts, add extra oats for substitute.)


After 4 hours, preheat oven to 300 degrees.
Whisk honey/maple syrup, vanilla, and oil or butter with the ferment mixture. Pour wet ingredients over the dry ingredients and stir to combine. Once mixed well, pour granola onto a large greased cookie sheet and spread out. (You could also use a silicon mat or parchment paper.)
Bake for 40 minutes, stirring halfway through baking. You’ll see the granola browning nicely, so just be sure you’re rotating granola round the pan so it can all cook evenly. Once timer goes off (or whenever granola is cooked), remove from oven and let cool for 15 minutes. Break up granola into pieces and add any dried fruit or extra add ins you may desire.
Store in an airtight container for up to a week.
