This recipe turns heavy, flavorless potatoes into an single bite experience. With each loaded potato slice bite, you’ll be hoping it never ends!
My husband loves potatoes, but I’ve had to really convince myself they can taste good. This is my best attempt to transform a simple potato into something spectacular.
Let’s make some loaded potato slices!
{Ingredients}
3 medium-large russet potato (or any potato variety)
1/4 cup oil (I used avocado)
1 cup diced up meat (bacon, ham, sausage, etc.)
1/2 cup – 1 cup shredded cheese
1 diced green pepper (or whatever color you have on hand)
1/4 cup diced up pickles (optional)
1 TBSP minced onions
salt/pepper
Sauce for drizzle/dipping
{Instructions}
Set oven to 400 degrees. Start by slicing up your potato into thin slices. Try to cut each slice about 1 centimeter thick. The potato should be thin enough to cook quickly, but thick enough to hold the toppings. Drizzle two separate baking sheets with oil. Place each potato slice on the pan in rows, then drizzle with oil again. It’s okay if the potatoes are touching. Sprinkle potatoes generously with salt and pepper.
Once oven is preheated, pop potatoes into the oven and cook for 15 minutes. When timer goes off, flip potatoes onto the other side, then cook another 15 minutes. Potatoes are done when they’re beginning to turn golden brown like a roasted marshmallow.
While potatoes are cooking, dice up the rest of the meat and vegetables. Set meat aside, then add 1 TBSP of oil to a stove-top pan with diced up peppers. Cook on medium-low heat stirring occasionally until peppers are tender. Remove from heat and set aside.
Once potatoes are cooked, toss together the meat, peppers, diced onion, and optional pickles. Sprinkle a small amount of mixed toppings onto each potato slice. Just make sure you evenly divide out toppings on each slice. Then, sprinkle with shredded cheese. Use as much or as little cheese as you want!
Place pans back in the oven. You’re just looking to warm up/melt the food, not necessarily start cooking it more. Once cheese is melted and the potato slices seem to be slightly crispy, pull potatoes from the oven and allow to cook for five minutes.
Serve with a drizzle of your choice sauce or dip.
