Healthified Chocolate Chip Cookies

Cookies for a snack? Yes, please! I love sweets of any kind, and at any time! Honestly, I eat treats too often. But sometimes, sweets aren’t all that bad if they’re made with the right ingredients. With littles running around the house, cookies are a highlight of any day! I created this recipe to make desserts for snacks a new possibility in our home. Whole wheat flour for a heathier grain and less sugar equals a delicious cookie for all!

[INGREDIENTS]

1/2 cup salted butter

1/2 cup melted coconut oil

1/2 cup brown sugar (or sweetener of your choice)

2 tsp vanilla

2 eggs

2 1/2 cups whole wheat flour

1 tsp baking soda

1/2 tsp salt

Heaping 1/2 cup semi sweet chocolate chips

[INSTRUCTIONS]

Mix butter, oil, sugar, vanilla, and eggs together until slightly pale and fluffier. Add dry ingredients (minus chocolate chips) and mix until just combined. Add chocolate chips and gently stir by hand. Refrigerate dough for approximately 30 minutes. During this time, preheat oven to 375 degrees.

Once dough has hardened slightly, form 1 – 2 inch cookie dough balls and space evenly apart on a greased or lined baking sheet. Top each dough ball with an extra chocolate chip or two for added sweetness. Bake on middle rack for approximately 8 minutes depending on the oven. Remove from oven once edges appear slightly brown. Allow to rest for a couple minutes on the pan, then remove to cool on a wire rack.

Continue with batches until cookie dough is gone OR freeze individual dough balls to easily pull out whenever needed. If baking from the freezer, thaw dough balls for 15 minutes, then pop in the oven at 375 degrees for 8-10 minutes.

Store in container for 3-5 days for best freshness!
