Simple Chicken Salad (for sandwiches)

Chicken salad can be real hit or miss. Sometimes it’s crisp, sometimes it’s soggy. Sometimes it’s fresh, other time it tastes a week old… especially the store-bought stuff. I have the simplest recipe to make at home using only six ingredients. It even turns out delicious whether you have all the ingredients or not. Try it out!

{Ingredients}

1 15 oz can shredded chicken

½ red onion (diced) OR 1 TBSP minced onion

½ green pepper (diced)

¼ cup mayonnaise

½ tsp lemon pepper

1 TBSP parley (dried or fresh)

Salt & pepper to taste (optional)

{Instructions}

Drain can of chicken, then shred chicken in a medium size bowl. Dice the onion. Dice the pepper. Add to chicken and combine well. In a separate bowl, add seasonings to mayonnaise and whisk together. Combine mayo mixture and chicken mixture together until fully incorporated together. Serve as sandwiches, on crackers, with shredded lettuce, or alone! Feeds 3-4 people. Store leftovers in fridge for up to 5 days.
