If there’s one meal that’s always easy, it’s breakfast – specifically breakfast bowls. Our family actually enjoys these breakfast bowls for dinner most of the time!
My whole family has always loved breakfast bowls as an easy, flavorful meal option. No real recipe required, but you can learn below how I build the perfect bowl, then steal this recipe and cook it on repeat.

The best part of breakfast bowls are all the toppings. From cheese to sauce and maybe even some spice, your breakfast bowl can be any flavor you want!
Here’s how I make the perfect breakfast bowl:
[INGREDIENTS]
5 large potatoes (any kind)
4 TBSP oil
1 tsp paprika
Sea salt + pepper for seasoning
1 large pepper slice or diced
1/2 onion sliced or diced
4 eggs
1 cup shredded cheese
Additional toppings (avocado, sauce, etc.)
[INSTRUCTIONS]
Preheat oven to 400 degrees. Wash potatoes and dice up. Toss with 2 TBSP of oil, then generously season with salt, a pinch of pepper, and 1 tsp of paprika. Dump onto a greased (or parchment covered) cookie sheet. Bake for 30 – 40 minutes stirring occasionally.

While potatoes cook, add 1 TBSP of oil into a frying pan, then cook up the onions and peppers together on medium heat, stirring occasionally. Sprinkle with salt. Cook until softened, then set aside.

Once potatoes and peppers are cooked, assemble your bowls by adding a large scoop of potatoes, then top with a small scoop of peppers/onions. Sprinkle each bowl with a handful of shredded cheese. You’ll want your bowls to be ready to top with the egg right when it finishes cooking.
Re-heat the same frying pan with 1 TBSP of oil. Once the pan and oil are hot, crack four eggs into the pan trying to keep them separated (DO NOT BREAK YOLK). Let eggs cook about two minutes, then gently try to flip each egg. The goal is to keep the egg yolks runny to add the most flavor and texture to your breakfast bowls. Once you have successfully flipped each egg, turn off heat.

Finish assembling each breakfast bowl by topping with one egg and adding any additional seasoning you may desire. Also, top with any extras you may desire like a sliced avocado or drizzle of barbeque sauce.
