
If you’re looking for quick, clean, and CHEAP pancakes, this recipe is the way to go. Full of protein without all the gluten and sugar. Just four ingredients total. They please the whole family, especially with a shmear of peanut butter, drizzled in maple syrup.
{INGREDIENTS}
1 ripe banana
2 eggs
1/2 cup oats (whatever brand you prefer)
1 tsp baking powder
{INSTRUCTIONS}
Add all ingredients to a blender. I find my hand-help blender to work best. Then, blend until well combined. Heat up a pan or griddle and lightly grease with butter or oil. Cook pancakes as you would a normal batch on medium heat. Allow to cook a couple minutes on both sides. Serve with maple syrup or honey. Or add you favorite nut-butter for added protein.
This recipe makes about 8 small pancakes. Multiply as needed.
