Then I realized how easy it is to cook rice in any liquid – chicken broth, coconut milk, or even this delectable tomato sauce mixture.
This 4-ingredient rice recipe is made with simple pantry staples like white/brown rice, rich tomatoes, garlic, and herbs. Whether you serve it alongside grilled chicken, roasted vegetables, or as a meal on its own, this easy tomato sauce rice recipe is a versatile favorite that belongs in your weekly rotation.

{INGREDIENTS}
6 roma tomatoes
1 TBSP minced garlic
1 tsp salt
1 cup rice (white is easiest, but brown works too)
{INSTRUCTIONS}
Begin by washing and slicing up tomatoes in quarters. Place tomato slices in a large pan, along with the garlic and salt. Cook on medium for about ten minutes. You’re looking to soften the tomatoes. Stir frequently to incorporate garlic, salt, and pepper together. After cooking, place tomato mixture into a blender and blend until smooth (one minute). Transfer blended tomatoes back into the pan, then add rice and stir. Proceed to cook rice as you would with water, cooking on medium heat with cover on for 15 minutes. Brown rice will take longer – at least 30 minutes. Leave cover on for the duration of the cooking to ensure rice will be fully softened. Once little holes appear in the rice, remove cover, stir, and serve! This can be enjoyed alone or pairs great with grilled chicken.
